Lentil and Quinoa Soup
- 4 garlic cloves, minced
- 2 cups chopped onions
- 2 cups chopped carrots
- 1 cup chopped celery
- 1 12 cups dried brown lentils
- 1 tablespoon dried Italian seasoning
- 1 (28 ounce) can crushed tomatoes
- 8 cups chicken broth
- 1 cup quinoa, rinsed
- 2 tablespoons balsamic vinegar
- salt and pepper
- In large pot, combine garlic, onion, carrot, celery, lentils, seasoning, tomatoes and broth.
- Bring to a boil.
- Reduce heat and simmer for 35 minutes.
- Stir in quinoa and simmer 15-20 minutes, until tender.
- Stir in vinegar.
- Season to taste with salt and pepper.
