Lentil and Quinoa Soup

  1. In large pot, combine garlic, onion, carrot, celery, lentils, seasoning, tomatoes and broth.
  2. Bring to a boil.
  3. Reduce heat and simmer for 35 minutes.
  4. Stir in quinoa and simmer 15-20 minutes, until tender.
  5. Stir in vinegar.
  6. Season to taste with salt and pepper.
