2nd Day Cabbage Soup Recipe
- 1 med cabbage head shredded fine
- 3 lrg yellow onions minced
- 1/2 lb lean bacon cubed
- 1/2 lb lean beef minced
- 1/2 lb lean pork minced
- 1/2 lb Hilshire light kielbasa cut small
- 5 med red potatoes sliced
- 5 med apples peeled, and coarsely minced
- 1 can Lipton beef broth defatted
- 1 can Lipton cream of mushroom soup Salt to taste Freshly-grnd black pepper to taste
- In a large Dutch oven, render bacon.
- Add in onions and sautee over low heat as there will be very little fat from the lean bacon.
- Once the onions are soft and start to get brown, add in minced beef and pork and cook till no longer pink.
- Add in potatoes.
- Cook for about 10 min turning potatoes several times.
- Add in salt, pepper.
- Kielbasa, cabbage and apples.
- Let simmer for another 10 min, turning often.
- Transfer everything to crockpot.
- Pour beef broth over everyting then spread cream of mushroom soup proportionately over all, working it slightly into the mix.
- Cook on HIGH for 2 1/2 hrs, on LOW for an additional 3 hrs.
- Mix thoroughly and check seasoning before serving in soup bowls.
- Reheat also in the crockpot.
- Two hrs on HIGH 1 hour on LOW.
