Spicy Fresh Chicken Salad
- 1 lb chicken breast, poached
- 2 green peppers, chopped into small pieces
- 4 tablespoons light mayonnaise
- 6 red chili peppers
- 2 tablespoons curry powder
- 1 tablespoon chili powder
- 2 teaspoons ginger, grated
- Shred the chicken breast and place in a mixing bowl.
- Add the chopped green peppers.
- You can also add chopped onions, celery, grapes, walnuts or anything else you happen to have on hand.
- In a seperate bowl, gently crush the chili peppers (but not to much because you will want to remove them later).
- Mix with the mayo and spices.
- Stir well.
- Remove the chili peppers.
- Mix all ingredients together and enjoy as a sandwhich, over crackers, or sliced tomato.
