Cranberry-Apple Compote - Ww Points = 2

  1. Mix the sugar, apple juice and water in a medium saucepan.
  2. Bring to a boil, stirring until the sugar dissolves.
  3. Stir in the cranberries and return to a boil.
  4. Cook, stirring occasionally, until the cranberries pop, 5-6 minutes.
  5. Remove the pan from the heat.
  6. Heat the oil in a large nonstick skillet over medium-high heat.
  7. Add the onion and ginger; cook, stirring occasionally until softened, 2-3 minutes.
  8. Stir in the apples and cook until crisp tender, about 2 minutes.
  9. Stir the apple mixture into the cranberry mixture and let cool.
  10. If making ahead, transfer to an airtight container; cover and refrigerate up to 2 weeks.
