Salsa Lentil Soup

  1. Cook onions, garlic and oil in large saucepan or Dutch oven on medium-high heat 3 to 5 minutes or until onions are tender, stirring frequently.
  2. Add water, salsa, lentils and tomato sauce; mix well.
  3. Reduce heat to medium-low; simmer 35 minutes.
  4. Add rice; return to boil on medium-high heat.
  5. Cover.
  6. Reduce heat to medium-low; simmer 5 minutes.
  7. Remove from heat.
  8. Add carrots and green pepper; let stand 5 minutes.
