Garlic Soup

  1. In a heavy kettle melt butter and olive oil over very low heat.
  2. Add garlic and onions; sweat the mixture (cover pan with a round of wax paper.)
  3. Stir occasionally for 2 hours.
  4. Stir in bread and cook for 10 minutes.
  5. Add broth and bring to a boil.
  6. Reduce heat and add cream.
  7. Simmer 30 minutes.
  8. Stir in salt, mustard and thyme.
  9. Serve hot, garnish with chives or cheese croutons.
