Creamy Superbowl Spinach Dip
- 1 each shallots small size, chopped
- 5 ounces water chestnuts rinsed and drained, 1 can
- 1/2 cup cream cheese (reduced-fat)
- 1/2 cup sour cream, light or cottage cheese
- 1/4 cup yogurt, low-fat plain
- 1 tablespoon lemon juice
- 1/2 teaspoon salt or to taste
- 1 x black pepper freshly ground to taste
- 6 ounces spinach
- 2 tablespoons chives freshly chopped
- Add shallot and water chestnuts in a food processor, paulse until coarsely chopped.
- Add cream cheese, sour cream, yogurt, lemon juice, salt and pepper and pulse until mixed well.
- Then put in spinach and chives and pulse until incorporated.
- Serve immediately or cover and refrigerate for 3 days.
- Before serving, stir to combine well.
