Bowtie Pasta with Mozzarella Saute

  1. Heat a skillet over high flame.
  2. Put 3 tablespoons of olive oil, onions, garlic, thyme, and saute for 1 minute.
  3. Then add the chicken stock, and allow the sauce to reduce by 1/2.
  4. Now add the pasta, tomatoes, mozzarella, spinach, and toss to combine.
  5. Season the pasta with salt and pepper, to taste.
  6. Drizzle with the remaining 2 tablespoons olive oil.
