Blueberry coconut french toast

  1. Preheat oven to 350AF.
  2. In a large mixing bowl, toss bread cubes, coconut, and blueberries.
  3. Place in a large baking dish.
  4. In a medium bowl, whisk eggs, coconut milk, mesquite honey, lemon zest, lemon juice, cinnamon and vanilla.
  5. Pour mixture evenly over bread in baking dish.
  6. Bake for 45 minutes, or until golden brown.
  7. Serve with boysenberry syrup.
