Sausage Ravioli Casserole

  1. Thinly slice sausage and brown in heavy fry pan.
  2. Add onion and pepper.
  3. Saute for 3 minutes.
  4. Add garlic, saute for another minute.
  5. Add eggplant, saute for 3 minutes.
  6. Stirring frequently.
  7. Remove all to oiled casserole dish.
  8. Add olive oil to pan.
  9. Heat to medium high.
  10. Place ravioli in pan and lightly brown on both sides.
  11. Return heat to medium.
  12. Return veggies to pan and combine stirring in herbs.
  13. Add spaghetti sauce, let heat through, add spinach and wilt.
  14. Return all to casserole dish and top with parmesan cheese.
  15. Place in 400-degree oven for 35 minutes.
  16. Uncovered.
