Amy 's Sweet Ginger .

  1. Wash , peel the ginger and thinly slice the ginger about 1/8 inch .
  2. Combine the cold water and sugar together in a medium saucepan on high heat and bring to a slow boil , stirring to make a syrup .
  3. Once it has boiled , Reduce the heat to medium low and add the ginger slices and simmer until the liquid is reduced to half .
  4. once liquid has reduced remove the ginger from the syrup mixture , best done with a slotted spoon , and place the ginger on absorbed paper or cloth to drain .
  5. While still warm dust with extra sugar if desired and let cool before eating .
  6. enjoy .

  8. NOTE : i only made a little batch this time cause it's spring , i make bigger batches come winter cause these are great to help with sore throats and colds .
