Coriander Rice

  1. Heat oil in heavy large pot over medium heat.
  2. Add shallots and saute until tender and golden brown, about 12 minutes.
  3. Add coriander and turmeric and stir 1 minute.
  4. Add rice and stir until coated.
  5. Add broth and salt; bring to simmer.
  6. Cover; reduce heat to low.
  7. Cook until rice is tender and liquid is absorbed, about 20 minutes.
  8. Stir in parsley.
  9. Transfer to platter and serve.
