Simply Citrus Cheesecake

  1. Line a 13x9-inch baking pan with aluminum foil with ends of foil extending over sides of pan.
  2. Combine cracker crumbs, butter and 2 tablespoons sugar; press firmly onto bottom of prepared pan.
  3. Beat cream cheese and next 3 ingredients at medium speed with an electric mixer until smooth.
  4. Add eggs, 1 at a time, beating at low speed just until blended after each addition.
  5. Stir in rinds and juices; pour evenly over crust.
  6. Bake at 325* for 40 minutes or until center is almost set.
  7. Cool completely on a wire rack.
  8. Cover and chill at least 4 hours or up to 24 hours.
  9. Remove cheesecake from pan, using foil handles.
  10. Cut into 16 squares.
