Potatoes in Sour Cream
- 6 medium potatoes
- 2 tbsp butter or margarine
- 1 medium onion, minced
- 1/4 cup bread crumbs
- 1/4 cup shredded sharp cheddar cheese
- 2 eggs, slightly beaten
- 1 cup sour cream
- 1/2 tsp salt
- 1/8 tsp pepper
- Cook potatoes in boiling salted water
- When soft, peel and slice into a 2 quart baking dish
- Melt butter in a skillet; add onions and brown slightly
- Add onions, bread crumbs, and cheese to potatoes
- Beat eggs and stir into sour cream then add salt and pepper
- Pour over potatoes
- Bake at 350F for 15 20 minutes, until will heated and slightly brown
