Warm Spinach Salad with Eggs and Bacon
- 1/4 cup olive oil and vinegar dressing
- 4 cups bagged baby spinach
- 1 cup quartered artichoke hearts
- 2 hard boiled eggs, sliced
- 1/4 cup crumbled real bacon pieces
- In a microwave-safe bowl, heat dressing in microwave on HIGH for 30 seconds.
- In a large bowl, combine spinach, artichoke hearts, eggs, and bacon.
- Pour warm dressing over top and toss to dress salad.
- Serve immediately.
