Smooth Strawberry Pudding

  1. In a medium size saucepan, sprinkle gelatin over water.
  2. Set aside for 5 minutes to soften.
  3. Add skim milk and honey and heat over medium heat, stirring constantly, until gelatin dissolves.
  4. Remove from heat and stir in vanilla.
  5. In a food processor, puree strawberries.
  6. Add gelatin mix and process until just blended.
  7. Divide among 8 dessert glasses and chill until set.
  8. Decorate with mint leaves before serving.
