Smooth Strawberry Pudding
- 2 ounces unflavored gelatin (2 envelopes)
- 12 cup cold water
- 1 cup skim milk
- 3 tablespoons honey
- 1 12 teaspoons vanilla extract
- 4 cups frozen unsweetened strawberries, thawed
- 8 mint leaves (optional)
- In a medium size saucepan, sprinkle gelatin over water.
- Set aside for 5 minutes to soften.
- Add skim milk and honey and heat over medium heat, stirring constantly, until gelatin dissolves.
- Remove from heat and stir in vanilla.
- In a food processor, puree strawberries.
- Add gelatin mix and process until just blended.
- Divide among 8 dessert glasses and chill until set.
- Decorate with mint leaves before serving.
