Calf's Liver With Bacon And Green Peppercorns Recipe

  1. Heat a medium nonstick skillet till warm, 1 minute.
  2. Cook bacon till crispy.
  3. Drain on paper towels, crumble and set aside.
  4. Cook onion in same pan 5 min, till lightly browned.
  5. Add in calf's liver and saute/fry 2 min per side, just till cooked through.
  6. Transfer liver and onions to a serving platter.
  7. Add in green peppercorns (and some of their liquid) to the skillet to hot through; spoon over liver just before serving.
  8. Garnish with crumbled bacon.
  9. This recipe yields 2 servings.
