Calf's Liver With Bacon And Green Peppercorns Recipe
- 4 x strips bacon
- 1/4 x onion thinly sliced
- 3/4 lb calfs liver
- 1 Tbsp. bottled green peppercorns
- Heat a medium nonstick skillet till warm, 1 minute.
- Cook bacon till crispy.
- Drain on paper towels, crumble and set aside.
- Cook onion in same pan 5 min, till lightly browned.
- Add in calf's liver and saute/fry 2 min per side, just till cooked through.
- Transfer liver and onions to a serving platter.
- Add in green peppercorns (and some of their liquid) to the skillet to hot through; spoon over liver just before serving.
- Garnish with crumbled bacon.
- This recipe yields 2 servings.
