Ham and Tomato Welsh Rarebit

  1. MELT the butter in a non-stick saucepan then add the flour and cook, stirring, for one minute.
  2. Stir in the beer, mustard and cheese and cook over a low heat until smooth, taking care not to let the mixture boil.
  3. PLACE the bread untoasted side up on a baking tray.
  4. Top each slice with ham and tomato then spoon over the cheese mixture.
  5. COOK under a hot grill for 2 minutes until golden and bubbling.
  6. Serve immediately
