Chicken Ratatouille Recipe

  1. Chop onion, cut pepper into rings.
  2. Slice zucchini.
  3. Cut tomatoes into wedges.
  4. Mince garlic.
  5. Cut chicken into crosswise strips.
  6. Saute/fry onion and pepper rings in 1 Tbsp.
  7. oil in frying pan over medium high heat till soft, about 3-4 min.
  8. Add in zucchini and cook till begins to brown, 3-4 min.
  9. Add in tomato and cook till soft, about 3 min.
  10. Push vegetables to one side, add in remaining 1 Tbsp.
  11. oil and cook chicken, stirring till it starts to brown, about 2 min.
  12. Stir in garlic, herbs, 1 tsp.
  13. salt, and 1/2 tsp.
  14. pepper and cook till chicken is done and liquid evaporated, about 5 min.
  15. Add in lemon juice before serving.
