Tequila-Cilantro Sorbet

  1. In a saucepan, bring the milk, water, sugar and cilantro to a boil; stir to dissolve the sugar.
  2. Transfer to a stainless steel bowl set in an ice water bath; stir occasionally until cool.
  3. In a blender, puree the sorbet mixture.
  4. Strain through a fine sieve set over a bowl.
  5. Stir in the lime juice, tequila and salt.
  6. Freeze the sorbet in an ice cream maker according to the manufacturer's instructions.
  7. Transfer to a shallow bowl, wrap with plastic and freeze until very firm, about 1 hour.
