Confetti rice
- 1 14.5oz can chicken broth
- 1 cup long grain rice
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp oregano
- 1/4 cup water
- 1/2 cup green pepper, diced
- 1/2 cup red pepper, diced
- 1/2 frozen peas.

- Combine the first 6 ingredients in a large saucepan.
- Bring to a boil then put the lid on the top and bring to a simmer.
- Simmer for 20min then remove from heat and add peas.
- Put the lid back on and let sit for 5min before serving.
- My fave way to eat it is with terriyaki glazed chicken and peppers and onions.
