Bread Flour Pancakes

  1. On April 16, 2012, I modified one part of this recipe.
  2. Rather than specifying the size of the egg, I added it to the net weight of the milk.
  3. Warm up your frying pan, and while you wait, prepare a dampened towel.
  4. In a bowl, break the egg and pour in milk until the combined weight is 225 g.
  5. Next add all the ingredients marked with a and mix well with a whisk.
  6. Next sift the flour and the baking powder into the bowl.
  7. With the whisk, lift from the bottom and let it drop back down into the mixture.
  8. Do this about 8 times making large, gentle movements.
  9. The goal is to not mix it too much.
  10. Next, place the hot frying pan on the wrung out towel, and when it has cooled a bit pour in the batter.
  11. Once both sides are cooked, it's done.
  12. The pancakes have a soft, fluffy texture and are really smooth.
  13. Look at how thick these are.
  14. With ham, cheese and a fried egg on top.
  15. With sliced cheese and mascarpone.
