Peanut Butter Chocolate Pie Recipe
- 1 Chocolate Cookie Pie Crust (recipe link in intro), cooled
- 1/2 cup semisweet or bittersweet chocolate chips
- 1 cup creamy peanut butter (not natural)
- 8 ounces cream cheese, at room temperature
- 2/3 cup powdered sugar, sifted
- 1/3 cup whole milk
- 2 teaspoons pure vanilla extract
- 1/2 cup cold heavy cream
- 1 chunk bittersweet chocolate, for shaving
- Melt the chocolate chips in the microwave until smooth.
- Drizzle the chocolate over the crust; spread into an even layer on the bottom.
- In the bowl of a stand mixer fitted with the paddle attachment, beat together the peanut butter and cream cheese until smooth, about 1 minute.
- Add the sugar, milk, and vanilla and beat until combined.
- In another bowl, whip the cream to medium-stiff peaks.
- Fold 1/3 of the whipped cream into the peanut butter mixture, then gently fold the remaining whipped cream into the mixture.
- Scrape into the pie shell.
- Cover and refrigerate until set, about 2 hours or overnight.
- Using a vegetable peeler, make chocolate shavings over the top of the pie.
