Alexis Smith's Corn Pudding Recipe
- 2 c. Canned whole kernel corn, liquid removed
- 4 ounce Can green chili peppers, liquid removed/cubed
- 1/4 lb Cheddar cheese, grated
- 1 c. Lowfat milk
- 1/2 tsp Salt
- 3 x Large eggs, beaten
- Mix ingredients in the order given.
- Turn into a greased 11/2 quart.
- baking dish and set in a shallow pan of warm water.
- Bake in preheated 350 oven for about 1 hour, or possibly till set.
- Serve warm or possibly cool.
- Great with barbecued chicken or possibly spare ribs or possibly steak.
