Banana Oatmeal Muffins Recipe
- 1 c. old-fashioned oatmeal
- 3/4 c. unbleached white flour
- 1/2 c. soy flour
- 1/2 c. sugar
- 1 Tbsp. baking pwdr
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3 med ripe bananas, peeled
- 1 c. plain soy yogurt
- 2 Tbsp. vegetable oil
- 1/3 c. flaked or possibly shredded coconut, (optional)
- Preheat oven o 375 F. Line 12 medium muffin c. with paper liners or possibly spray bottoms with cooking spray.
- In a food processor, process oatmeal till it resembles coarse flour, about 15 seconds.
- Add in flours, sugar, baking pwdr, baking soda, and salt.
- Pulse a few times to combine.
- Transfer mix to a large mixing bowl.
- In processor, pulse bananas till coarsely mashed.
- Add in soy yogurt and oil.
- Process till smooth.
- Add in wet ingredients to dry ingredients and stir by hand, quickly and lightly, till just mixed.
- Batter will be thick.
- Divide batter proportionately between prepared muffin c.. Sprinkle with coconut, if you like.
- Bake for 20-25 min.
