Pea Salad
- 1 lb Peas - fresh or frozen
- 8 oz Bacon - sliced 1/2" thick, cooked until almost crisp.
- 1/2 cup Mayo
- 1/2 cup Sour Cream
- 1/4 cup Lemon Juice
- 1 stalk Celery - diced
- 3 Scallions - sliced, including green part.
- 1 Salt & Pepper to taste.
- Combine every thing but the peas in a bowl until well mixed.
- Gently fold in peas until combined.
- Chill for an hour and serve.
