Chicken & Rice Casserole Recipe
- 1 - 2 lbs. boneless chicken breasts
- 1 pkg. Uncle Bens long grain wild rice
- 1 can cream of celery soup
- 1 can cream of mushroom
- 1 c. mayonnaise
- 2 c. shredded cheese
- Preheat oven to 350 degrees.
- Grease 9x13 inch pan or possibly casserole dish.
- Wash chicken well.
- Cut into strips.
- Cook rice according to directions.
- Chicken can be cooked right in the rice, while being cooked or possibly cooked separately.
- While chicken and rice are cooking; mix together soups and mayonnaise; set aside.
- Then when chicken and rice are done, mix soup, mayonnaise and rice together and chicken.
- Spread in baking dish.
- Spread shredded cheese on the top of the mix.
- Bake for 1 hour.
- Serve while warm.
- Recipe may be doubled.
