Apple Pumpkin Bread
- 1 cup applesauce, chunky unsweetened
- 34 cup pumpkin, canned
- 4 large egg whites
- 1 cup whole wheat pastry flour
- 12 cup oat bran
- 2 teaspoons baking powder
- 1 tablespoon cinnamon
- 1 12 teaspoons baking soda
- 1 cup cinnamon baking chips
- Preheat oven to 350F Lightly butter a 5x9-inch loaf pan and line bottom with a piece of parchment paper, cut to fit.
- Beat applesauce and pumpkin until smooth.
- Add eggs and whirl to combine.
- In a large bowl, sift together flour, oat bran, baking powder, cinnamon, and baking soda.
- Stir in apple mixture until evenly moistened.
- Stir in cinnamon chips.
- Scrape the thick batter into pan and spread level.
- Bake bread 45 to 50 minutes or until toothpick comes out clean.
- Loosen bread from pan with a knife and invert onto a rack.
- Remove parchment.
- Turn bread right-side-up and let cool at least 1 hour before slicing.
