Beef Cobbler Recipe
- 56 gm butter and margarine
- 1 x onion, peeled and finelychopped
- 3 stk celery, minced
- 2 x carrots, peeled and minced
- 28 gm plain flour
- 2 tsp gravy pwdr
- 1 x salt and pepper
- 448 gm leg of beef, cubed
- 420 gm can of tomatoes, roughly minced
- 1 x bayleaf
- 2 tsp mixed dry herbs
- 1 tsp granulated sugar
- 224 gm selfraising flour
- 1 pch salt
- 1 tsp mixed dry herbs
- 56 gm margarine
- 7 Tbsp. lowfat milk
- Method1.
- Heat the fat fry onion celery and carrot till soft.
- 2.
- Mix together flour gravy pwdr and seasoning.
- Add in meat and toss to cover proportionately.
- 3.
- Place tomatoes in pan with bayleaf herbs and sugar.
- Bring to the boil add in fried vegetables and meat heat thoroughly.
- Place in casserole dish.
- 4.
- Cook in oven till meat is tender for 11 1/2 hrs.
- 5.
- To make scones: place flour salt and herbs into a bowl.
- Rub in margarine till the mix resembles fine breadcrumbs.
- Add in lowfat milk all at once and mix well till it forms a dough.
- Roll dough onto a floured surface till l/2in/lcm thick and cut with a 2in/Scm plain cutter making 12 scones.
- 6.
- When the meat is tender remove from oven arrange scones in an overlapping circle around edge of dish.
- 7.
- Return to oven for 30 min or possibly till scones are well risen and golden.
- 8.
- Serve cobbler with potatoes rice or possibly green vegetables.servings: 4
