BBQ Prawn Skewers
- 1/3 cup KRAFT Classic Mayonnaise
- 2 cloves garlic, crushed
- 1 teaspoon finely chopped Italian parsley
- black pepper, to taste
- 24 green prawn cutlets Safeway 1 lb For $8.99 thru 02/09
- 2 bunches asparagus, trimmed and cut into 5cm lengths
- 2 tablespoons olive oil
- 2 tablespoons roughly chopped oregano leaves
- rind and juice of 1 lemon
- salt and freshly ground black pepper
- green salad, to serve
- Combine the mayonnaise, garlic, parsley and pepper then chill.
- Thread 3 prawns and 4 pieces of asparagus alternately between the prawns onto a wooden skewer.
- Continue with another 7 skewers to make 8.
- Combine the oil, oregano, juice, rind and seasonings and pour over the skewers, allow to stand for 15 minutes.
- Char grill the skewers on a preheated BBQ or grill plate until golden and cooked through.
- Serve prawns with a dollop of aioli for dipping and a crisp green salad.
