Homemade Marshmallows Recipe
- 2 c. sugar
- 3/4 c. warm water
- 1 c. light corn syrup
- 1/2 c. water
- 2 tbsp. unflavored gelatin
- 2 teaspoon vanilla
- Confectioners' sugar (optional)
- Dipping chocolate (optional)
- In a saucepan, combine sugar, warm water, and corn syrup.
- Cover and bring to a rolling boil; uncover and cook to 240 degrees.
- In a mixer bowl, soak gelatin in water.
- Slowly pour cooked mix into gelatin mix, beating constantly.
- When mix begins to thicken, add in vanilla.
- Beat till marshmallow sticks to beaters, about 10 min.
- Pour into a buttered 8-inch square pan.
- When cold, turn out on a surface dusted with confectioners; sugar; cut into squares with wet shears.
- Dip or possibly use as they are.
- Otherwise, cover each square with confectioners' sugar.
