Homemade Marshmallows Recipe

  1. In a saucepan, combine sugar, warm water, and corn syrup.
  2. Cover and bring to a rolling boil; uncover and cook to 240 degrees.
  3. In a mixer bowl, soak gelatin in water.
  4. Slowly pour cooked mix into gelatin mix, beating constantly.
  5. When mix begins to thicken, add in vanilla.
  6. Beat till marshmallow sticks to beaters, about 10 min.
  7. Pour into a buttered 8-inch square pan.
  8. When cold, turn out on a surface dusted with confectioners; sugar; cut into squares with wet shears.
  9. Dip or possibly use as they are.
  10. Otherwise, cover each square with confectioners' sugar.
