Low Fat Spice Cookies
- 1 3/4 cup whole wheat flour whole-wheat, sifted
- 1 cup flour, unbleached all-purpose sifted
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1/4 teaspoon cloves ground
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup butter or margarine, softened
- 1/4 cup fat free spread softened
- 1 cup brown sugar packed
- 1 each egg whites whipped
- 1 teaspoon vanilla extract
- 1/2 cup sour cream fat-free
- Preheat oven to 350F (180C).
- Prepare baking sheets with cooking spray.
- In a mixing bowl, combine flours, cinnamon, nutmeg, ginger, cloves, baking soda, and salt.
- In another mixing bowl, combine margarine, spread, brown sugar, egg white, vanilla, and sour cream.
- Add dry ingredients with wet ingredients just until moistened.
- Cover and chill overnight.
- On a heavily floured surface (dough will be slightly sticky that's why more flour is needed), roll dough 18 inch thickness.
- Using a 2 1/2 inch cutters, cut dough into desired shapes.
- Arrange 1 inch apart on prepared baking sheet.
- Bake for 15 minutes and lightly browned.
- If desired, decorate cookies with Powdered Sugar Icing.
