Lemon Pine Nut Green Beans

  1. Blanch green beans in salted boiling water.
  2. Drain and pat dry.
  3. In a large skillet melt butter over medium to medium high heat.
  4. Cook shallots approximately 1 minute.
  5. (Stir often to prevent burning).
  6. Add pine nuts to toast for an additional minute.
  7. Add green beans and toss (just enough to warm and coat.
  8. ).
  9. Add lemon juice, salt, and pepper.
  10. I like to add some fresh lemon peel as well.
  11. Gives it a great additional taste.
  12. Toss well to combine all ingredients.
  13. ENJOY!
