Vickys Vegan Basic Homemade Seitan
- 1 cup vital wheat gluten
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 tbsp soy sauce or see my profile (vic20adamant) for soy-free soy sauce
- 1620 ml strong vegetable broth
- In a bowl add the vital flour,onion and garlic powders
- In another bowl add the soy sauce to 180mls of the stock
- Slowly add this to the flour mixing with your hands until the flour is combined.
- You should have a big rubbery ball of dough and you might need more or less stock
- Knead the dough a bit to make it smooth, let it rest a few minutes, then knead again
- Divide the dough into the shape you need for your recipe.
- Inch cube pieces are good for casseroles, shape into patties for burgers, oblongs for mock steaks or chicken breasts etc
- Slowly simmer in the rest of the stock in a large pot for an hour on a low heat.
- Seitan expands when it cooks so you need a large pot
- This recipe is for basic seitan, it won't taste nice eaten like this.
- Use it in any recipe that calls for seitan.
- It will take on any flavour, you can have it curried, sweet n sour, bbq.

- For chickeny flavoured seitan add a half tsp of sage and a quarter tsp of thyme in the 1st step
