Vegetable Millet Casserole Recipe
- 1 c. Millet (found in health food stores), a complete protein and inexpensive
- 2 c. minced vegetables (carrot, squash, broccoli, or possibly green beans)
- 1 c. minced onions
- 2 tbsp. oil
- 3 c. water
- 2 or possibly 3 c. cheese (Colby, Cheddar, Monterey Jack, one or possibly combination of all three)
- Saute/fry onions and vegetables in oil till onion is clear.
- In large pan, heat millet with burner on medium to medium-high.
- Don't burn.
- Stir water into millet, cook on medium with lid on for 30 min.
- Remove lid, combine sauteed vegetables and replace lid.
- Cook on low for another 30 min, stirring occasionally.
- Stir in half of cheese.
- Put all of mix in large casserole dish.
- Top with remainder of cheese and broil only long sufficient to heat top cheese.
