Phil D's Chocolate Peanut Butter Squares
- 3 cups chocolate cookies (finely ground)
- 34 cup unsalted butter (melted)
- 8 ounces unsalted butter (softened)
- 4 cups peanut butter
- 4 12 cups powdered sugar
- 1 12 cups ganache (reference Ganache by chef #372286)
- 34 cup chocolate sprinkles
- Combine ground cookies and melted butter and press into a greased half sheet pan.
- Beat sugar, softened butter and peanut butter together until light and fluffy.
- Press sugar/butter/peanut butter mixture onto crust until very level.
- Pour warm ganache over the top and spread smooth.
- Evenly sprinkle chocolate sprinkles over the top and chill for several hours before cutting into 1 inch squares.
- Store squares in the fridge till ready to plate and serve.
