Zucchini Jelly

  1. Combine the zucchini, sugar , pineapple, & lemon juice in a large pot.over medium heat.
  2. Boil mixture until zucchini is clear.
  3. Remove from heat.
  4. Add geletin until completely dissolved.
  5. (I did not peel mine).
  6. Laddle into hot jars to within about 1/4" from the top.
  7. Seal & process in water canner 5 minutes.Allow to seal & cool.
  8. Store.
