Sweet Gherkin Deviled Eggs

  1. Slice each hard-boiled egg in half lengthwise and place the yolk in a food processor.
  2. Set the whites aside.
  3. Add the mayonnaise, mustard, chopped gherkins and pepper to the food processor.
  4. Puree for several minutes, or until smooth.
  5. Place the mixture into a large Ziploc bag, snip off the tip, and fill each halved egg.
  6. Sprinkle with paprika, and top with a gherkin pickle slice for decoration.
  7. Note: Make sure to thoroughly dry off the gherkin pickles with paper towels before chopping or slicing.
