Sweet Gherkin Deviled Eggs
- 12 Hard Boiled Eggs, Peeled
- 3/4 cups Mayonnaise
- 1/4 cups Dijon Mustard
- 1/4 cups Chopped Gherkin Pickles
- 1/2 teaspoons Freshly Ground Black Pepper
- Paprika
- Additional Sweet Gherkin Pickles, Sliced For Decoration
- Slice each hard-boiled egg in half lengthwise and place the yolk in a food processor.
- Set the whites aside.
- Add the mayonnaise, mustard, chopped gherkins and pepper to the food processor.
- Puree for several minutes, or until smooth.
- Place the mixture into a large Ziploc bag, snip off the tip, and fill each halved egg.
- Sprinkle with paprika, and top with a gherkin pickle slice for decoration.
- Note: Make sure to thoroughly dry off the gherkin pickles with paper towels before chopping or slicing.
