Spam Basil Rice with Fried Egg
- 1 can Spam less salt (350g)
- 150 g tofu
- 1 onion
- Leaves from 1 stalk celery
- 1 tsp grated ginger, optional
- 2 tsp olive oil
- Put the Spam into a bowl and mash with a wooden spatula.
- Then add tofu (if you have enough time in advance, wrap the tofu with kitchen paper and leave to soak up the water from the tofu for half an hour).
- Keep mashing everything into small pieces.
- Chop the onion and celery leaves into small pieces.
- Add all into the bowl with the ginger and keep mixing.
- Heat olive oil in a frying pan, then add the mixture to fry until it becomes a nice crispy golden-brown colour.
- Make sure you fry enough so that all water has evaporated from the tofu.
- Put cooked rice on a plate, add the cooked Spam and fried egg and finally garnish the rice with some basil.
- Enjoy your meal :)
