Vegetable-Nut Loaf and Nut Butter

  1. Saute first 11 ingredients over medium-high heat for 5 minutes until the veggies begin to soften.
  2. Add next 4 and continue stirring another 5 minutes.
  3. Remove from heat and add bread crumbs.
  4. Mix thoroughly.
  5. Butter a medium loaf pan.
  6. Bake 1 hour at 350 degrees.
  7. Remove from oven and let set at least 15 minutes before slicing.
  8. Combine last 4 ingredients in a saucepan until smooth to make Nut Butter sauce.
