Lemon Cream Cookies
- 1 cup sugar
- 1 cup Crisco shortening
- 3 eggs
- 1 teaspoon lemon extract
- 1 cup heavy cream
- 12 teaspoon baking powder
- 3 12 cups flour
- 1 dash salt
- yellow decorator sugar or confectioners' sugar
- Cream together Crisco and sugar.
- Add eggs one at time to the creamed mixture.
- Add the extract and heavy cream.
- Add the baking powder to the flour and add the flour mixture to the creamed mixture a little at a time, stirring after each addition.
- Drop by teaspoonfuls onto an ungreased cookie sheet.
- Bake at 350 for about 8 - 10 minutes.
- Cool for only 15 seconds on cookie sheet and remove to cookie rack or paper towels to cool.
- Sprinkle with yellow decorative sugar or confectioners sugar if desired.
