The Madame Almacks Cocktail

• 1 1/2 ounces Zubrowka Bison Grass vodka
• 1/2 ounce Cynar
• 1/2 ounce simple syrup
• One sprig fresh mint
• Champagne, for topping

1. Combine all ingredients except Champagne in a cocktail shaker with ice.
2. Shake vigorously, then strain into a chilled cocktail glass and top with Champagne.
