Texas Straw Hats
- 1 cup onions chopped
- 23 cup celery chopped
- 23 cup sweet red bell peppers chopped, or yellow
- 23 cup corn fresh (Optional)
- 3 tablespoons vegetable oil
- 2 pounds ground beef
- 12 ounces tomato paste 2 cans
- 1/2 cup ketchup
- 2 teaspoons worcestershire sauce
- 2 cups water
- 1 dash red hot pepper sauce
- 2 teaspoons chili powder up to 3 tsp (or more, to taste)
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon thyme
- 1 x cheddar cheese
- 1 x corn chips Fritos
- In large skillet, cook onion, celery, bell pepper and corn (if using) in oil til tender but not brown.
- Add beef; brown lightly.
- Add remaining ingredients except chips and cheese.
- Simmer uncovered for 1 hour, stirring occasionally.
- Serve over corn chips, top with grated cheese.
