Smoked Sausage, Chicken and Shrimp Stew
- 4 bone-in chicken thighs (about 2 lb.)
- 2 onions, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 2 each green peppers and red peppers, chopped
- 1/2 cup KRAFT Zesty Italian Dressing
- 1 lb. smoked sausage, cut into 1/2-inch slices
- 1 can (28 oz.) diced tomatoes, undrained Safeway 1 lb For $1.29 thru 02/09
- 1 can (14-1/2 oz.) chicken broth
- 1/4 tsp. ground red pepper (cayenne)
- 1/2 lb. shrimp, peeled, cleaned Safeway 1 lb For $8.99 thru 02/09
- 6 cups cooked rice
- 1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream
- 1/4 cup chopped fresh cilantro
- Spray large saucepan with cooking spray; add chicken.
- Cook on medium-high heat 3 min.
- on each side or until lightly browned.
- Remove from pan; set aside.
- Drain.
- Cook onions and peppers in dressing until tender.
- Add chicken, sausage, tomatoes, broth and pepper.
- Bring to boil; reduce heat to low.
- Simmer 30 min.
- or until chicken is cooked through.
- Add shrimp; cook 5 min.
- or until shrimp is opaque.
- Spoon over rice; top with sour cream and cilantro.
