Scottish Fried Herring with Mustard Sauce
- 1 tbsp. butter
- 1 tbsp. flour
- 1 cup milk
- 2 tsp. mustard
- 4 fresh herring, cleaned and filleted
- 1 egg, beaten
- 1 cup coarse oatmeal
- 4 tbsp. butter
- To prepare the mustard sauce, melt the butter in a small saucepan.
- Blend in the flour and gradually add the milk.
- Stir until thickened, then blend in the mustard.
- Keep warm.
- Dip the herring into the egg and coat with the oatmeal.
- Melt the butter in a skillet and fry the herring until tender, about 8 to 10 minutes.
- Serve with the mustard sauce.
- Serves 2.
