Cucumber Salad

  1. Halve cucumber lengthwise and seed.
  2. Thinly slice cucumber and carrot crosswise.
  3. Thinly slice onion and transfer to a bowl with cucumber and carrot.
  4. In a small saucepan heat vinegar, sugar, and cayenne over moderate heat, stirring until sugar is dissolved.
  5. Cool vinegar mixture and pour over vegetables.
  6. Marinate salad at least 2 hours and up to 3 days.
