16 Minute Tortilla Pizza
- 3 each flour tortillas soft, prefer whole wheat
- 2 tablespoons olive oil
- 3 each italian plum (roma) tomatoes finely diced
- 1 tablespoon capers drained
- 1 medium onions chopped
- 1 teaspoon black pepper to taste
- 1/2 cup jarlsberg cheese grated, or Swiss
- 1 x salt to taste
- Preheat oven to 400F (200C).
- Cut the tortillas into four triangles.
- Brush with olive oil on both sides.
- Place them out on a cookie sheet.
- Spread some of the chopped onion, tomatoes and olives on each piece.
- Add a pinch of capers, season with pepper and cover with cheese.
- Sprinkle salt to taste.
- Bake in the oven at 400F (200C) for 5 minutes.
- Do not burn.
- Serve hot.
