Cashew Butter Chip Cookies
- 1 1/2 cup all purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter at room temperature ( 1 stick )
- 1 cup granulated sugar
- 1 large egg
- 1/2 cup cashew butter
- 1/2 tsp vanilla extract
- 1/2 cup semi sweet chocolate chips
- Preheat oven to 350.
- Line cookie sheets with parchment paper.
- In a bowl, whisk flour, baking powder, baking soda and salt until blended, set aside.
- In another large bowl beat butter and sugar until light and fluffy, add egg, cashew butter and vanilla and beat until well blended.
- Add flour mixture gradually mixing in with rubber spatula just until blended, add cocolate chips and mix in.
- Roll batter into 1 inch balls, flatten with the tines of a fork to make a criss-cross pattern, dipping the fork in cold water if it sticks.
- Bake 13 to 18 minutes until lightly golden brown.Transfer to wire racks to cool.
- Makes about 2 dozen cookies.
