Cashew Butter Chip Cookies

  1. Preheat oven to 350.
  2. Line cookie sheets with parchment paper.
  3. In a bowl, whisk flour, baking powder, baking soda and salt until blended, set aside.
  4. In another large bowl beat butter and sugar until light and fluffy, add egg, cashew butter and vanilla and beat until well blended.
  5. Add flour mixture gradually mixing in with rubber spatula just until blended, add cocolate chips and mix in.
  6. Roll batter into 1 inch balls, flatten with the tines of a fork to make a criss-cross pattern, dipping the fork in cold water if it sticks.
  7. Bake 13 to 18 minutes until lightly golden brown.Transfer to wire racks to cool.
  8. Makes about 2 dozen cookies.
