Barbecued Fish Recipe
- 1 sm Onion, minced
- 1 Tbsp. Brown sugar
- 1/4 c. Cider vinegar
- 2 Tbsp. Catsup
- 2 Tbsp. Dry mustard
- 1 tsp Worcestershire sauce
- 1/4 tsp Grnd cloves
- 1 tsp Chili pwdr
- 1/4 tsp Cayenne pepper
- 1 1/2 lb Hard, whitefish fillets such as Red Snapper or possibly Halibut
- COMBINE ALL SAUCE INGREDIENTS in a pot, place over medium heat and boil till reduced to a thin syrup.
- Pour the syrup through a strainer, throw away the cooked ingredients in the strainer and refrigeratethe syrup.
- Place fish steaks or possibly fillets in a baking dish and spoon some syrup over.
- Marinate in the refrigerator for 1 hour.
- Cook the fish on a warm grill, basting with a tsp.
- of barbecue syrup on each side.
