Peanut Butter Pie No. 1
- 1 c. powdered sugar
- 1/2 c. peanut butter
- 1/2 c. chopped Tift County peanuts
- 1/4 c. cornstarch
- 2/3 c. sugar
- 1/4 tsp. salt
- 2 c. milk, scalded
- 3 egg yolks, beaten (save whites for meringue)
- 2 Tbsp. butter
- 1 tsp. vanilla
- 1 baked pie shell
- Combine powdered sugar, peanut butter and peanuts until consistency of
- biscuit
- mix.
- Spread
- 1/2
- of this mixture on baked
- crust bottom.
- Combine cornstarch, sugar, salt and milk and mix
- well.
- Add
- gradually
- to
- beaten
- egg yolks and cook until thickened.
- Add
- butter
- and vanilla and carefully pour custard over
- mixture in baked crust.
- Top with meringue, made with 3
- egg whites and 6 tablespoons sugar.
- Sprinkle meringue with balance of
- peanut butter mixture and bake at 325u0b0 until lightly browned.
